Ingredients
  • one head of garlic, roasted
  • 2 large yellow onions
  • 4 tablespoons butter
  • 1/4 cup olive oil
  • dash of sugar
  • 1/4 teaspoon cayenne
  • kosher or sea salt to taste, about 1 teaspoon
  • 1/2 teaspoon of your favorite fresh crushed pepper
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayo

Directions
  1. Roast the garlic w/ olive oil, salt, and pepper by cutting the top off the garlic to expose the top of each clove. Sprinkle w/ olive oil, salt, and pepper and wrap tightly w/ foil. Roast for 45 minutes @ 350 degrees. Open and press the garlic out.
  2. Slice the onions into medium thick rounds. Warm the butter and the oil and sauté the onions and add the cayenne, salt, and pepper on medium for about 10 minutes, then turn the heat to medium low and add a dash of sugar. The onions will caramelize and turn a yummy brown.
  3. Mix the cream cheese, sour cream, and may together and beat until smooth. Add the onions and roasted garlic and SERVE!

This sounds delicious! I have a weakness for the poor (or lazy man's) onion dip: Lipton onion soup mixed with sour cream and slathered onto potato chips. Yours sounds far superior! Thanks for sharing.

This was yummy. We had it last Sunday for my kids. I used the cayenne but left out the crushed pepper. I need to kkep my diet mellow. But with those changes it was great.


In answer to Psyche's question, try raw veggies, pretzles, flatbread cut into triangles or melba toast. Some of my favorite dip dippers.

This sounds great taste-wise, but it seems like onion rings would be hard to get on a cracker. I think I would quarter the rings. Added to my file of recipes to try. Thanks!
