A very tasty and tangy, yet somewhat fattening meal. This chicken goes great over rice.

Ingredients
  • 6 chicken thighs
  • 1/4 cup soy sauce
  • 2 lemons
  • 2 tablespoons butter
  • 5 cloves garlic, peeled and chopped
  • salt and ground black pepper to taste

Directions
  1. In a shallow dish, soak chicken thighs in soy sauce. Squeeze juice from the lemons into the dish. Let stand for at least 10 minutes.
  2. While the chicken is marinating, melt butter in a large skillet or wok. Add garlic and fry until tender. Add chicken thighs and cook on medium high until the juices run clear, about 20 to 25 minutes.
  3. Serve over white rice with pan drippings.

You got me at "greasy!" Ha! Not a thigh person, so will sub with breasts. Thanks...sounds very tasty!


Not sure if I did something wrong here or not, but I had no pan juices. Maybe because I used skinless thighs? Maybe I should have covered the chicken because of that. I cooked it over medium low heat because the garlic started to burn. The chicken tasted all right though. Tried to post a picture.
