How to make it

  • Cut the eggplants in half lengthwise. Scoop out the pulp and reserve. Brush insides with olive oil. Sprinkle with salt. Broil until soft, for about 10 minutes.
  • For stuffing:
  • Sautee the onion and garlic in about 2 tbsp. of olive oil, until translucent.
  • Add ground lamb and cook, stirring, until no longer pink.
  • Chop the reserved eggplant pulp and add to the meat mixture. Cook for about 10 minutes, or until the pulp is soft.
  • Add parsely, mint and basil. Season with salt and pepper. Cook and stir another minute.
  • Turn off the heat. Stir in lemon juice, tomatoes and Feta cheese. Mix in the beaten egg.
  • Stuff broiled eggplants and bake in the 370F oven for about 30 minutes, or until lightly browned on top. Sprinkle with fresh chopped parsely, if desired. Serve warm.
