Ingredients
  • For the falafel:
  • 14 oz. can of chickpeas/garbanzo beans.
  • 1/2 small onion, chopped
  • 2 cloves of garlic, chopped
  • 3 tablespoons of fresh parsley, chopped
  • 1 teaspoon fresh cilantro, chopped
  • 1 teaspoon cumin
  • 2 tablespoons flour
  • Kosher Salt to taste
  • Fresh cracked Black Pepper, to taste
  • Canola Oil for frying
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • For the pita bread:
  • 1 1/8 cups warm water (110 degrees F/45 degrees C)
  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons active dry yeast

Directions
  1. For the falafel:
  2. Drain and rinse chickpeas. Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour.
  3. Combine ingredients in a food processor. You want the result to be a thick paste.
  4. Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.
  5. Fry in 2 inches of oil at 350 degrees until golden brown (5-7 minutes).
  6. Serve hot.
  7. For the pitas:
  8. Place all ingredients in bread pan of your bread machine, select Dough setting and start. When dough has risen long enough, machine will beep.
  9. Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch rope. With a sharp knife, divide dough into 8 pieces. Roll each into a smooth ball. With a rolling pin, roll each ball into a 6 to 7 inch circle. Set aside on a lightly floured countertop. cover with a towel. Let pitas rise about 30 minutes until slightly puffy.
  10. Preheat oven to 450 degrees. Place 2 or 3 pitas on a wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to 5 minutes until puffed and tops begin to brown. Remove from oven and immediately place pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. Once pitas are softened, cut in half .
  11. Falafel can be served as an appetizer with hummus and tahini, or as a main course. Stuff pita bread with falafel, lettuce, tomatoes, tahini, cucumber yougurt sauce, hummus... the works!

I love this type of food, and this is another one of your 2 awesome recipes in one combos! The falafel recipe sounds delish, and I love the pita recipe too!

I'm with Julia - this is another wonderful two-punch recipe from you. I love falafel - and making pitas, so I'll be trying both of yours soon. I wish I had that plate of goodness right now...for breakfast. It looks delicious. Thank you, Luisa!

Oh my, luisa, you have me drooling at 8am this morning! What a beautiful plate of food, and what a fantastic recipe combo...falafel is one of my youngest daughter's favorite foods, and even though there is plenty of good falafel to be found in the city, having the ability to make it fresh at home is better than better! I am really looking forward to trying my hand at this - will let you know how I do...maybe this weekend when Erin is out her. I'm hungry now!!!

Luisa you have out done yourself with this double recipe. I love watching pita bread puff up in the oven while baking. Your falafel recipe with fresh ingredients is so welcomed it is not often that I see one quite like it.
This recipe has Jim's name written all over it so I sent it to him.
Five forks and a smile :) that last all day long.
Saved and printed and Flagged as you already know.

This is one of my all time favorite snacks. I love everything about this recipe. And with fresh pita?? Can't get any better. My favorite toppings are Tahini sauce with lemon and the cucumber/mint yoghurt. Wish I could give you more than 5!!!!!!!!! Jim

I love falafel with tomatoes, lettuce and yogurt sauce. Typically, I get take out falafel. I tried making them once with a boxed mix, and they didn't turn out right. Thank you so much for the recipe, Luisa, that also goes for your homemade pita too! They look perfect in your picture, I just gotta try it! :) Flagged for beauty + ^5
