Ingredients
  • 2 1/2 lb Lean ground chuck
  • 1 lb Lean ground pork (I've made it with all beef)
  • 1 cup onion, finely chopped
  • 4 Garlic cloves, finely chopped
  • 1 can beer (12 oz.)
  • 8 oz. can tomato sauce
  • 1 cup Water
  • 3 tbls. Chili powder
  • 2 tbls. Cumin
  • 2 tbls. beef bouillon granules or 6 cubes
  • 2 tsp. Oregano
  • 2 tsp. Paprika
  • 2 tsp. Sugar
  • 1 tsp. Cocoa, unsweetened
  • 1/2 tsp. Coriander
  • 1/2 tsp. Louisiana hot sauce,to taste
  • 1 tsp. Flour
  • 1 tsp. Cornmeal
  • 1 tbls. Warm water
  • I like beans in my chili so I add some

Directions
  1. In Dutch oven, brown half the meat and pour off fat
  2. Remove meat
  3. Brown remaining meat and pour off all fat except 2 tbls.
  4. Add onion and garlic and cook and stir until tender
  5. Add meat and remaining ingredients except flour, cornmeal and warm water
  6. Mix well
  7. Bring to boil, then reduce heat and simmer covered 2 hours
  8. Stir together flour and cornmeal, then add warm water and mix well
  9. Stir into chili mixture
  10. Cook covered another 20 minutes

Love this chili....Corinne, instead of the cornmeal addition, I tried the Alton Brown way of crumbling up white tortilla chips and adding them to the pot and it works great, too. This sounds delightfully intensely flavored just the way I like it.


Looks great but have to admit I stick to turkey chili. Phil stays away from ground beef as much as possible.


Love this. I also add cornmeal in many of my chili recipes!

Okey dokey - we also use ground turkey which you can't tell the difference in taste.....I've never heard of adding corn meal...hmmmm interesting. I love chili!

We've always added cornmeal for thickening, and also oatmeal...this is much like the way I make chili, but I'm definitely going to try this combo of ingredients...sounds great, thanks!


Sounds good, I use instant potatoe flakes to thicken my chilli but I guess the corn meal would do the same. Really does make a difference. Thanks for sharing your recipe, you have my 5 also.

Good set of ingredients. I stole your cocoa and beef bullion ideas. The only thing missing is some real peppers - add chili and/or jalapeno peppers and cut back on the hot sauce.


I made this yesterday & it was a huge it!! I loved the idea of the cocoa...instead of using just the tomato sauce I used half sauce half Zing Zang (a bloody mary mix) and I tripled the recipe and it's all gone!! Thanks for a great recipe!
