How to make it

  • Scrub potatoes well
  • Cut into wedges into a bowl of ice water
  • Preheat oven to 450
  • Mix first round sauce
  • Drain water from potatoes
  • Pour sauce over potatoes and mix well
  • Place potatoes on pan in single layer, pour any remaining sauce over all
  • Roast about 30 minutes
  • Mix 2nd round of olive oil and butter
  • Remove from oven and turn potatoes
  • Pour sauce over
  • Roast about 25 more minutes
  • Remove from oven
  • Turn heat off
  • Generously shake parmesan over potates
  • Sprinkly generously with shredded cheese, bacon and chives
  • Return to oven about 10-15 minutes longer
  • The shredded cheese will have made a cheesey crust on the potatoes, and on the pan.
  • Serve with a side of ranch if desired.
