Salted Cashew Caramel Bars

Another goldie-oldie I dug out of my Cookies and Bars recipe file...my youngest daughter saw me going through these a few months back and remarked "Mom, it's kinda sad no one will have things like this in the near future - hand written recipes you've written down over so many years. Read more I'll kinda miss it. My generation only keeps recipes online." That really hit home to me, and so I am trying to organize all those hundreds and hundreds of cards into some sort of "preserved state" for at least my 2 daughters to see how us "old cooks" used to do things! Ingredients
- Crust shopping list
- 1½ cups brown sugar, packed shopping list
- 1 cup butter, softened shopping list
- 1 teaspoon salt shopping list
- 3 cups flour shopping list
- 2 cups salted cashews, mixed nuts, peanuts, whatever nut you prefer shopping list
- caramel topping shopping list
- ½ cup corn syrup shopping list
- 2 tablespoons butter shopping list
- 1 tablespoon water shopping list
- 6 ounces butterscotch chips shopping list
- (I would try pnut btter chips!) shopping list
How to make it
- For the crust, cream together the butter, brown sugar and salt; then blend in the flour. Press mixture into the bottom and up the sides of a 10x15 baking sheet. Bake at 350 degrees for 10 minutes. Prepare topping while crust is baking.
- For the topping, combine all ingredients in a medium saucepan; bring to a boil and then boil gently for 2 minutes, stirring constantly.
- To assemble, remove crust from oven, sprinkle nuts over hot crust, and then pour hot topping over the nuts. Return pan to oven and bake an additional 10 to 14 minutes, until golden brown. Cool completely before cutting into bars.
