Mexican Corn Casserole

- 4- eggs shopping list
- 1- can ( 15 1/4 ounces) whole kernel , drained shopping list
- 1- can ( 14 3/4ounces) cream style corn shopping list
- 1 1/2 -cups cornmeal shopping list
- 1 1/4- cups buttermilk shopping list
- 1- cup unsalted butter at room temperature shopping list
- 8- ounces chopped green chiles shopping list
- 2- medium onions , chopped shopping list
- 1- teaspoon baking soda shopping list
- 1 1/2- cups shredded pepper-jack cheese-- shopping list
- 1 1/2- cups shredded cheddar cheese - shopping list
- opt.........jalapeno and sweet red pepper rings for garnish shopping list
How to make it
- preheat oven to 325 degrees F.
- grease a 13x9 x2 inch baking dish
- beat eggs in a large bowl, add kernel corn, cream style corn, cornmeal, buttermilk, butter, chiles, onions and baking soda mix well
- stir in 1 cup each of the shredded cheeses.......
- pour mixture into baking dish
- bake uncovered for 60 minutes
- top with remaining 1 cup of cheeses
- let stand for 10-15 minutes before serving
- garnish with pepper rings .........
- makes 12-15 servings ................
