Ingredients

4- eggs

1- can ( 15 1/4 ounces) whole kernel , drained

1- can ( 14 3/4ounces) cream style corn

1 1/2 -cups cornmeal

1 1/4- cups buttermilk

1- cup unsalted butter at room temperature

8- ounces chopped green chiles

2- medium onions , chopped

1- teaspoon baking soda

1 1/2- cups shredded pepper-jack cheese--

1 1/2- cups shredded cheddar cheese -

opt.........jalapeno and sweet red pepper rings for garnish

Directions

preheat oven to 325 degrees F.

grease a 13x9 x2 inch baking dish

beat eggs in a large bowl, add kernel corn, cream style corn, cornmeal, buttermilk, butter, chiles, onions and baking soda mix well

stir in 1 cup each of the shredded cheeses.......

pour mixture into baking dish

bake uncovered for 60 minutes

top with remaining 1 cup of cheeses

let stand for 10-15 minutes before serving

garnish with pepper rings .........

makes 12-15 servings ................
