Tilapia with Mango Salsa

- 2 tsp reduced-calorie balsamic vinegar shopping list
- 1 mango shopping list
- 1 tsp chopped jalapeno pepper shopping list
- 1/4 cup finely chopped cucumber shopping list
- 2 tsp grated lime zest shopping list
- 2 tbsp finely chopped red onion shopping list
- 2 tilapia fillets (about 1/2 lb) shopping list
- 2 tsp canola oil shopping list
- 1/2 cup uncooked brown rice shopping list
- salt & pepper to taste shopping list
How to make it
- Slice mango close to the pit
- Make diagonal cuts through the fruit, leaving the skin intact
- Now invert the peel, and gently pare off the little cubes of fruit
- Finely chop the cucumber, jalapeno and onion
- Combine all ingredients as chopped
- Add the balsamic vinegar

- Meanwhile, cook the rice and drain
- ===========
- Cook the tilapia over medium-high flame for three minutes per side, (I cook with propane gas) in a small amount of canola oil and balsamic vinegar
- ===========
- To plate:
- Place a bed of rice in the center of the dish
- Place tilapia on top
- Cover with salsa, OR place a dab of salsa on the fish, and surround the bed of rice with salsa to compliment
