Made these over the weekend, they turned out great! I did reduce the sugar by almost half and they still were sweet. Next time I think I will put the cream cheese in the middle of the muffin, to make it more like a filling, rather than topping. Added a picture for you, hope that's OK.

Yes, this sounds so good! I also like the idea of making the cream cheese mixture into a filling! I'm going to have to try this! Thanks Peeta and Juels!

I just made these and they were great! Juels was right! These are very good with the filling in the middle...as you can see from my picture! I used about 1 tbls. in each. I poured in about half the batter then added the filling, then just top it off with a little more batter. I reduced the sugar by half for the batter because I like my muffins less sweet. I used the full amount of sugar for the filling. These would also be great with strawberries instead of peaches! Thanks for posting this recipe Peetabear! Oh, by the way...I like these better cold than warm...just my personal opinion! Ooops...I forgot to mention that I only made half the recipe but I made the full amount of filling. I got 14 muffins out of this.

These sound delectable! I like the filling in the middle idea as well. I used to make a great Pumpkin Cream Cheese Streusal Muffin for the holidays that everybody ate up.
Good job!

Is the Spicer Castle a bed and breakfast?
If that is an example of the things they serve I bet it is great!
