Ingredients
  • 1/4 pound (1 stick) unsalted butter, at room temperature
  • 4 ounces freshly grated Parmesan (about 1 cup)
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 teaspoon chopped fresh thyme leaves (I use a little more)
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Place the butter in the bowl of an electric mixer fitted with a paddle attachment and mix until creamy.
  2. Add the Parmesan, flour, salt, thyme and pepper and combine.
  3. Dump the dough on a lightly floured board and roll into a 13-inch long log.
  4. You may have to add a little bit of water to the dough as you form it as this dough is pretty crumbly.
  5. Wrap the log in plastic wrap and place in the freezer for 30 minutes to harden (or leave in fridge overnight, if you want to get a head start on this recipe).
  6. Meanwhile, preheat the oven to 350 degrees F.
  7. Cut the log crosswise into 1/4 to 1/2-inch thick slices.
  8. Place the slices on a sheet pan and bake for 22 minutes.

I love Ina - can't go wrong with her recipes...simple enough but elegant and I've never made one yet that I didn't consider a "keeper"...I'm sure this one is equally good.


Small world. ;-) We Southern Californians must be entertaining similarly. I'd made this dough recently after seeing the recipe in Ina's "Back to Basics" book and baked them this weekend for a dinner party and posted the recipe, too. Did the house smell divine! They are delicious. If you buy the book they're titled "Parmesan and Thyme Crackers" and the book is worth owning and enjoying.


I have made crackers like these a long time ago and forgot were I put the recipe now I have a replacement. Five forks and a big smile :)
