Ingredients
  • 2 pounds of good hamburger (ground chuck-ground sirloin--ETC.)
  • 1package of burrito seasoning per pound of hamburger.
  • 1 large can of refried beans. or make your own.
  • 1 jar of picante sauce. I use hot Pace.
  • 2 TBSPS. of pickled jalapenos or fresh diced fine. (if you want it smoky use chipolte peppers in adobo sauce).
  • 6 burrito size tortillas.
  • 1 TBSP. Cumin.
  • 4 cups or more to taste--Pepper jack cheese or cheddar or your favorite. (shredded).

Directions
  1. Brown your hamburger pour off grease if any add burrito seasoning package or packages mix thourghly, add diced jalapenos set aside.
  2. In a large saucepan add refried beans and picante sauce heat until bubbly.
  3. Smear a thin layer of the bean mix on the bottom of a 13x9 casserole dish to prevent sticking.
  4. Then put 2 tortillas on the bottom of the casserole dish.
  5. A layer of the bean mixture.
  6. A layer of the beef mixture.
  7. Top with shredded cheese.
  8. Then 2 more tortillas and repeat the bean mixture and meat mixture and cheese until you have filled the casserole dish or ran out of the goodies.
  9. If you have extra goodies but not enough to make another layer then grab a spoon and mix all the left overs and use one of the remaining tortillas and sample, cooks option (LOL)
  10. Top it with cheese cover with foil and bake at 350 degrees for 15 minutes uncover and bake the other 15 minutes until bubbly.
  11. I serve it with a cold Beer or pop for the kids and as Rachael Ray would say YUMMO.

Lovein Mexican food!


Well I'll give this 5 forks because it's similar to my "Mexican Lasagna" which I love. We cut it like a piece of lasagna and then add shredded lettuce, sour cream and salsa. I then noticed your "Chicken Tortilla Bake" which is a lot like my "Mexican Chicken Bake" (and I thought I made up that recipe!). THEN I noticed your "Cheesy Jalapeno Cornbread" which is just a little similar to my "Jiffy Chipotle Muffins". So, I had to read your "about me" and have to mention that my hubby has a 2007 Harley Davidson Super Glide. Anyway, it made me smile this morning looking through your recipes and hope you share a few more. I may have to tweak mine a bit with some of your ingredients (although hubby doesn't like the spice as much as I do!) Thanks for sharing. Peg

This Is A 'Must Try'


I'm sorry for any one who has tried this recipe I left out one of the most important ingredients the package of burrito seasoning per pound of hamburger after you have drained any grease off add the burrito seasoning and mix throughly add jalapenos and set aside. if there is any who have tried this please forgive me and if you have made this one please try it with the seasoning it will be even better.
