How to make it

  • Peel and devein the shrimp. Arrange them in a steamer, cover and steam 3 minutes or until they turn pink.
  • Divide the shrimp among 6 (1 1/2 cup) baking dishes coated with cooking spray.
  • Sprinkle with chopped cilantro; set aside.
  • Combine flour and 1/4 cup milk in a small saucepan. Stir until smooth.
  • Add remaining 1 cup milk and margarine to flour mixture. Stir well.
  • Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  • Remove from heat. Add the monterey jack cheese and jalapeno pepper, stirring until the cheese melts.
  • Pour sauce evenly over shrim; sprinkle with Parmesan cheese.
  • Broil 5 1/2 incles from heat, 3 to 5 minutes or until lightly browned.
  • Garnish with fresh cilantro sprigs.

    Keni, thanks for the changes. When I first made this recipe, I thought it was very, very bland. In fact, I was sorry I uploaded it before trying it. However, after seeing your mouthwatering photo and alterations, I may give it another shot. I like a recipe with bite. From the looks of your changes, you've created that.

    Okay, darlin', made this tonight, and it was fantastic! Since this was from Cookin' Light(and we never do ;), and not your original creation, I thought you'd be interested in how I made it. I sauteed the shrimp in butter with garlic JUST til pink. Removed from the pan. Added the diced jalapeno(I used what equaled 1/2 a pepper/person) and a bit more butter and sauteed til soft. I then added the flour to make the roux, added the milk...er, okay, half and half ;)...stirred til thick. Added my favorite salt seasoning blend which is garlic and onion powders, and black pepper and salt, and the cheese, as per instructions...a touch of Old Bay. I arranged the shrimp as directed, in serving dishes, then squirted each with lemon juice before adding the cilantro. Covered with the sauce(I doubled the shrimp, but tripled the sauce ingredients), then the Parmesan and broiled as recommended. Served it with steamed broccoli tossed with lemon/garlic butter and salt and pepper. Wonderful!! :) Thank you so much for the original recipe and for being the type of cook/friend who isn't offended by lil changes and corroboration! *hugs*

    no salt, pepper, onion, garlic or hot sauce or cayenne pepper(even though there's jalapeno, that's not the same in whole pepper form) in it, Rottman, even with a fair bit of dairy...I think some or all of those would really kick it up :) Sounds like a tasty concept, though! :)

    Thanks everyone.

    I fixed this for the first time last evening and found it rather bland. Sorry. Not sure if it was the shrimp, or the recipe. I'd rate it a solid three.

    ...next time I'll stir-fry the shrimp in some garlic and oil before putting them in the sauce, instead of steaming them...or, I'll smother them in Old Bay before steaming them... Or...

    Oops, I'm thinking out loud again.
