Monterey Shrimp

- 2 1/4 lb unpeeled medium-sized fresh shrimp shopping list
- cooking spray shopping list
- 1 1/2 tb chopped cilantro shopping list
- 3 tb all-purpose flour shopping list
- 1 1/4 cup milk, divided shopping list
- 1 1/2 tb margarine shopping list
- 1/2 cup shredded monterey jack cheese shopping list
- 1 jalapeno pepper, seeded and chopped shopping list
- 1 tb grated parmesan cheese shopping list
- Fresh cilantro sprigs shopping list
How to make it
- Peel and devein the shrimp. Arrange them in a steamer, cover and steam 3 minutes or until they turn pink.
- Divide the shrimp among 6 (1 1/2 cup) baking dishes coated with cooking spray.
- Sprinkle with chopped cilantro; set aside.
- Combine flour and 1/4 cup milk in a small saucepan. Stir until smooth.
- Add remaining 1 cup milk and margarine to flour mixture. Stir well.
- Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
- Remove from heat. Add the monterey jack cheese and jalapeno pepper, stirring until the cheese melts.
- Pour sauce evenly over shrim; sprinkle with Parmesan cheese.
- Broil 5 1/2 incles from heat, 3 to 5 minutes or until lightly browned.
- Garnish with fresh cilantro sprigs.

no salt, pepper, onion, garlic or hot sauce or cayenne pepper(even though there's jalapeno, that's not the same in whole pepper form) in it, Rottman, even with a fair bit of dairy...I think some or all of those would really kick it up :) Sounds like ...more
