How to make it

  • CAKE:
  • Cream 1 cup butter
  • Gradually add 2 cups sugar
  • Blend in 4 eggs, one at a time
  • Combine 3 cups flour, 1 teaspoon salt, 1 teaspoon baking powder and 1/2 teaspoon soda
  • Combine 1 cup buttermilk with 2 teaspoons vanilla
  • Add milk and flour mixtures alternately to creamed mixture, ending with dry mixture
  • Mix well
  • Turn into greased 9x15 casserole or cake pan
  • Bake at 325° for 40 - 55 minutes
  • (Tooth Pick Test - to See If It Comes Out Clean) for Doneness

  • French Butter Cream Frosting:
  • 2/3 cup sugar
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 cup cold butter
  • 1 teaspoon of vanilla extract
  • Place sugar, flour and salt in saucepan and mix thoroughly, stir in milk. Cook over medium heat and stir constantly until very thick. Remove from heat and pour into a medium mixing bowl. Cool to room temperature. Add 1/2 cup butter at a time (cut into several pieces) and beat at medium-high speed until smooth. Add vanilla and beat well.
  • Chill icing for a few minutes before decorating. Iced cake must be refrigerated until serving time.
  • Makes 2 cups

    How could this cake be bad with all that butter in it! I recommend that you ask foodies to read the entire recipe before beginning, since the ingredients for the frosting are located in the "directions" portion of the recipe. Looks delicious, Irish!

    Wow Irish, this sounds great. Mary Kay frosting is what some call this---and it's light & tastes like vanilla ice cream! The buttermilk cake here is wonderful. Anyone making this will get great results!--Kn0x--
