Baked Fillet Steak With Blue Cheese Whisky

- 4 good sized fillet steaks, whatever size you like shopping list
- 6 onions finely sliced shopping list
- 250g soft white cheese shopping list
- 8 slices smoked streaky bacon shopping list
- salt & pepper shopping list
- A good glug of Aberlour whisky 12 year old or any good single malt you can lay your hands on. One for the pot & two for the cook of course:-)) shopping list
- red wine & butter for deglazing shopping list
- Fresh thyme shopping list
How to make it
- Slice the onions & fry in a frying pan with a little oil & the fresh thyme until the onions are golden brown
- Add the whisky & fry until the whisky has reduced & then leave to cool
- Split the fillet steak in the middle to make a pocket & add the onions & a nice slice of blue cheese
- wrap the steak with 2 slices of streaky bacon & place in a roasting pan.
- preheat the oven on a just over medium-highish heat & cook the steak to your liking, anything from 5-15mins
- Remove the steaks from the pan & deglaze with some wine & butter
- Serve with seasonal veggies & potatoes of your choice & pour the juices over the top.
