Ingredients

How to make it

  • Slice the onions & fry in a frying pan with a little oil & the fresh thyme until the onions are golden brown
  • Add the whisky & fry until the whisky has reduced & then leave to cool
  • Split the fillet steak in the middle to make a pocket & add the onions & a nice slice of blue cheese
  • wrap the steak with 2 slices of streaky bacon & place in a roasting pan.
  • preheat the oven on a just over medium-highish heat & cook the steak to your liking, anything from 5-15mins
  • Remove the steaks from the pan & deglaze with some wine & butter
  • Serve with seasonal veggies & potatoes of your choice & pour the juices over the top.

    This recipe sounds just wonderful and I can't wait to try it soon! I adore Scotland and have had some of THE best food in the UK up there. The Hebrides.. Just love them both :-) inner and outer. This makes me want to get back to Tobermory real soon. Thanks for sharing this recipe and helping to conjure up some good memories too.
