Sunday Scrambled Eggs

I make these when I have left over bacon...Yeah, right...I never have left over bacon...LOL
Ingredients
- 1-3 oz. pkg. cream cheese, softened shopping list
- 5 eggs, divided shopping list
- 1/4 cup milk shopping list
- 1/2 tsp. pepper shopping list
- 1/8 tsp. salt shopping list
- 2 tbls. chives, chopped shopping list
- 1 tbls. butter shopping list
- 1/2 cup Monterey Jack or pepper Jack, shredded shopping list
- 3 slices bacon, cooked and crumbled shopping list
How to make it
- Beat cream cheese until smooth
- Add 2 eggs and beat until smooth
- Add remaining eggs, milk, pepper and salt and beat until blended
- Stir in chives
- In large skillet, melt butter over medium low heat
- Add egg mixture and cook without stirring until eggs begin to set on bottom
- Drag a spatula across bottom of pan to form large curds of egg
- Add cheese and bacon
- Continue cooking until cheese melts and eggs are firm but still moist
