I make these when I have left over bacon...Yeah, right...I never have left over bacon...LOL

Ingredients
  • 1-3 oz. pkg. cream cheese, softened
  • 5 eggs, divided
  • 1/4 cup milk
  • 1/2 tsp. pepper
  • 1/8 tsp. salt
  • 2 tbls. chives, chopped
  • 1 tbls. butter
  • 1/2 cup Monterey Jack or Pepper Jack, shredded
  • 3 slices bacon, cooked and crumbled

Directions
  1. Beat cream cheese until smooth
  2. Add 2 eggs and beat until smooth
  3. Add remaining eggs, milk, pepper and salt and beat until blended
  4. Stir in chives
  5. In large skillet, melt butter over medium low heat
  6. Add egg mixture and cook without stirring until eggs begin to set on bottom
  7. Drag a spatula across bottom of pan to form large curds of egg
  8. Add cheese and bacon
  9. Continue cooking until cheese melts and eggs are firm but still moist

I do this one but I use heavy cream instead of milk. Great low-carb breakfast!


Oh yummmm okay now I can't wait for Sunday and combine with my Sunday Brunch Pancakes what a day lol - I be working it off the whole week all those carbs and calories =}

O-M-G!!!! NEVER did I EVER think about cream cheese in the EGGS!! And here I thought I was the cream cheese queen...LOL Great googa-mooga...do I have to wait til Sunday?????

Came back to get the recipe, am making this morning...told you I wasn't gonna wait til Sunday...lol And I saw that in my excitement the other day I forgot to give you a high 5! Gonna do that now, then, I'm gonna go make these eggs....5 eggs, huh? Wonder what Bryan's gonna have...lol

Dang girl - I wish I had some bacon - I'd be making this for a quick dinner too.... next time Im doing my grocery shopping - Im not forgetting the bacon - this sounds great - just my style too....super comfy...last time I made eggs - I added goat cheese and sliced grape tomatoes - that was interesting - but not as good as I think this would taste... thanks for posting.
