How to make it

  • Place rinsed chicken in crock pot and add juice from both limes, chili powder and salsa.
  • Tie or band cilantro together and drop on top of chicken along with lime halves(don't worry, these will all be fished out, later :)
  • Cook on low about 8 hours or so.
  • When tender enough to shred, remove lime halves and cilantro, and shred in pot using two forks. Stir well and add remaining seasoning.
  • Set your slow cooker to lowest setting(I use warm) and continue to simmer about 30 minutes. (I use this time to prepare rice)
  • To serve, warm tortilla in dry skillet until just beginning to toast but are still flexible.
  • Add a spoonful of chicken mixture to tortilla and add cheese, sour cream, green onions, and more cilantro, as desired.

    I just edited to fix crazy auto-correct errors, but also wanted to say that this chicken was so good that I can't stop thinking about it! I keep thinking of new ways I can eat this chicken, and wondering how often I can make it without the man catching on.

    I made these the other night, and they were amazing! It was an easy recipe to follow, and it it was some of the best chicken I've ever had! The only thing I did differently is that I used rotel instead of salsa because that's what I had on hand.

    The next time I make this, I think I'm going to use it in a burrito bowl, chipotle style.

    Made this last night and we loved them!! I cut the recipe way back to only 2 breast (less than 1 lb.) so I only cooked them about 4 1/2 hrs in the slow cooker and it was perfect!!! A new favorite!

    I made these the other night and they were great! Because I needed some lime zest for a recipe, I peeled some off of the lime halves before putting them in the crock pot...that wasn't such a good idea, because they made the chicken slightly bitter. But that was my own fault for doing something stupid, and I can tell that this is a great recipe because the meat was still so tender and tasty even with my dumb mistake! Other than that, I made it exactly as written. The meat was delicious with sour cream, lettuce, olives, and cheese in a whole wheat tortilla. Thanks for sharing!

    This sounds great! I just have one question...you mention lemons in the directions but I only see limes in the ingredients list. Should we use both?
