Just a very simple and quick side dish for a Mexican or TexMex meal. I like to use very ripe avocados for this, because, mixed with the warm rice, these take on nearly a buttery consistency. Prep time includes cooking rice.

Ingredients
  • 8 servings brown rice, cooked your favorite way, but with minimal seasoning
  • 1 large can Rotel style tomatoes
  • 2 ripe avocados
  • salt and pepper

Directions
  1. Combine tomatoes and avocado with warm, cooked rice.
  2. Add salt and pepper and toss to combine.
  3. *the main photo is the way I served it...with a simple Southwest broiled white fish.

Great idea, I've never thought to do it, but now that I see it makes complete sense to add the avocado to the rice. I think I'll be doing this next week!
