    I have made these and they are delicious. I like to chop some fresh parsley or cilantro and fold into the mixture after it has been creamed. Ohhhhh yummmmy ;) HIGH 5 all the way!!!

    Funny you should ask LOL
    I just read that cuc skin is a no-no for anyone over 50 because it is really too hard to digest.

    As far as the wax goes, that is so yucky and it really doesn't scrub off, but you could try that. I grow my own and I think if you could get yours at a farmer's market you would be ok.
    HOWEVER; I really do prefer mine 'shaved' because I do not like the taste of the skin at all.
    In these recipes peeling would be just fine and more to people's liking.

    I probably have not helped at all, but I tried.

    Sounds refreshing.

    I was always told "shave a cucumber, not a zucchini" because of the waxy skin on a cuke. Is this true? I've never tried them with the skin on.

    Well Lady!! guess i'm going to do the same as you did with my recipes....copy, and copy and copy... that way I can bring them with me to our camp..lol I cook for more people there than here at home...this is a easy cool summer recipe...love it!

    This was pretty good but it was missing something! Maybe some salt and onion powder. In my photo I showed the recipe in the 3 ways mentioned in the directions...but 2 of the ways seemed very similar. I liked it the rolled way.
