Lemon Sheet Cake Recipe

Ingredients

1 package lemon cake mix (18 1/4 oz)

4 eggs

1 can lemon pie filling (15 3/4 oz)

1 package cream cheese (3 oz), softened

1/2 cup butter or margarine, softened

2 cups confectioners sugar

1 1/2 teaspoons vanilla extract

Directions

In a large mixing bowl, beat the cake mix and eggs until well blended.

Fold in pie filling.

Spread into a greased 15 in x 10 in x 1 in baking pan.

Bake at 350 for 18 to 20 minutes.

Cool on a wire rack..

In a small bowl, beat cream cheese, butter and confectioners sugar until smooth.

Stir in vanilla.

Spread over cake.

Store in refrigerator.

30 to 35 servings..

This is fantastic. My family asked for seconds, even my "don't like cake" daughter. I'll be making this recipe again and again. It'll be great for large groups. I added a bit of the lemon pie filling to the icing, giving it some lemon flavor as well.
