Ingredients
  • A) 1 1/2 pounds ground beef
  • 1 medium onion, finely diced (about 2/3 cup)
  • B) 1 cup cracker crumbs
  • 1/4 tsp pepper
  • 1 1/2 tsp salt
  • 1/2 cup tomato sauce
  • 1 beaten egg
  • C) 1/2 cup tomato sauce
  • 1 cup water
  • 1 1/2 tbs white vinegar
  • 3 tbs classic yellow mustard
  • 2/3 cup light brown sugar

Directions
  1. Mix A using hands then add ingredients in B continue mixing.
  2. Form loaf in 11 x 7 baking dish. Shape with hands so as to leave at least an inch on all sides.
  3. Mix ingredients of C together and pour over loaf.
  4. Baste 3 to 4 times during baking.
  5. Bake in 400 degree oven uncovered for 50 minutes or until center is 160-170 degrees.

I made the meatloaf this evening and I have to tell you that I absolutely LOVE the sauce and how you call for the meat to be basted 4 times during the baking period. How could a person not enjoy the aroma of brown sugar, tomato sauce and seasoning being drizzled over beef and baked to a nice caramelized layer?! YUM! Thank you for sharing this recipe...it will be a keeper in my kitchen favorites =).

I am making a double batch for guests tonight where I have added ground pork to the ground beef.
