How to make it

  • Microwave potatoes: Adjust oven rack to lowest position and heat oven to 450 degrees. Place potatoes in a bowl,wrap tightly with plastic,and microwave until translucent around edges,3 to 5 mins,shaking bowl half -way through to redistribute potatoes. Transfer potatoes to cooling rack and thoroughly blot dry with paper towels.
  • Heat oil:Coat rimmed baking sheet with 5 Tbs of oil. Transfer to oven and heat until just smoking,5 to 7 mins. Meanwhile,whisk remaining oil,cornstarch and salt in large bowl. Add potatoes and toss to coat.
  • Bake potatoes: Arrange in single layer on hot baking sheet and bake till deep,golden brown and crisp,25 to 35 mins,flipping potatoes half-way through cooking time. Transfer to paper towel-lined plate and blot with additional paper towels. Serve.

    Yep, these are just as it says - crispy on the outside and soft on the inside. I served these with your Oven Fried Shrimp for shrimp and chips. :)

    Made these yesterday and they are awesome! They turned out exactly as the recipe promises- CRISPY and NOT Soggy as most other oven fries! They are perfect as the "chips" for an English Style fish & Chips meal. Thank you for posting this Cooks Country Recipe here!

    I was searching for a french fry recipe to go with our hot wings as a side "sofa-gating" dish for the Saints playoff game today. I found this recipe, tried it and the fries were (and still are) a hit! Easy prep, great taste, and lower calorie than fried. Directions are "on-the-mark!" Thank you, Pleclare!

    Love fries! (or chips as we call them)... Store-bought Oven ones are fine but you can choose the variety of potato to make these, and they will be great (not to mention a bit healthier!)
