Potatoes Boulangere

- 30g butter shopping list
- 1/2 leek shopping list
- 1 small onion shopping list
- 500g potatoes shopping list
- 450ml chicken stock (vegetable stock works just as well for vegetarians) shopping list
- black pepper shopping list
How to make it
- Preheat oven to gas 4 / 180c
- Grease a roasting tin or shallow dish with 1/4 of the butter
- Wash potatoes and slice thinly into rounds
- Finely slice the onion and leek and fry in another 1/4 of the butter in a hot frying pan until lightly coloured
- Arrange a layer of potatoes on the base of the dish
- Sprinkle with the onion and leek
- Keep building up the layers, ending with potato
- Pour over the chicken stock (or veg stock), dot with remaining butter and season with black pepper ( you might like to thicken the stock, only slightly )
- Cook for approx 45 Min's until the top is crispy and golden.

I LOVE leeks, I agree it does sound wonderful. Perfect for fall and winter. Will save this under my favorite recipes.
