How to make it

  • Preheat oven to gas 4 / 180c
  • Grease a roasting tin or shallow dish with 1/4 of the butter
  • Wash potatoes and slice thinly into rounds
  • Finely slice the onion and leek and fry in another 1/4 of the butter in a hot frying pan until lightly coloured
  • Arrange a layer of potatoes on the base of the dish
  • Sprinkle with the onion and leek
  • Keep building up the layers, ending with potato
  • Pour over the chicken stock (or veg stock), dot with remaining butter and season with black pepper ( you might like to thicken the stock, only slightly )
  • Cook for approx 45 Min's until the top is crispy and golden.
  • Wasn't that quick?

    Vivian this dish was so perfect, I just really guessed on the measurements and everything came out perfect. You know I had to delete the onions boohoo because of my son, but he loved the potatoes- But it was good with the garlic too. This went perfect with peas and thin pork chops wrapped in prosciutto.

    You know what I love about this recipe most? the fact that there is not a lot of fat here, no cheese, no heavy cream! so I'm going to be making this dish quite a bit. Oh I sautéed the leeks and the garlic in EVOO, and then just added the butter like you said to the potatoes- I wasn't sure how much you were calling for but only used a few pads on each layer.
