Monday's Meals

    Up early to go hit the treadmill. Ugh. I hate Monday's Especially Monday mornings when I have to go hit the treadmill without a cup of coffee first. (I use it as my reward when I'm done. LOL!)
    Pitch black out there still with a sliver of a moon shining.
    It's my late night at the store this evening so I'm going to thaw a jar of Chicken Noodle Soup that I have frozen and serve it with Corinne's
    Grilled Tuna Roll

    It's an obsessive compulsive Monday here.

    Mother is up already, chomping at the bit to get to the doctors' office for some tests to see if she needs to have her medication modified. Doesn't matter that the office isn't open for a couple more hours. She's ready to go. She's been waiting for two months and is all consumed today. The appointment is for ANYTIME in November but here we are, the month a few hours old.
    Might as well make up a shopping list and save gas. Have 3 egg yolks in the fridge. Three more will make a custard for a batch of ice cream. Probably the last batch for the year.
    Having left-over potato stuffing. And saved the potato water to make some bread.

    Maybe some fried chicken.

    found 2 ticks on the dog. wow that Frontline doesn't last a minute past the month!!! She was due to have it put on this morning!
    I have an ultrasound on my thyroid at 10am and then going to visit with mom. trying to decide what to have for dinner. Thinking maybe Sausages and potatoes.

    Hope everything goes well with Rachel's Doctor's appointment Laurie. I hate ticks. We rarely see them here but when I was living at home as a teenager there were a million of the disgusting things. Ugh. Are you having problems with your thyroid or is it just a follow up/check up kind of thing?

    Laurie,hope your day goes well. We had just a handful of kids. Lots of candy left Ugh!Hope your test and Rachel's goes well. Seems late for ticks but guess till the freeze.
    Points,I make ice cream all year around. It's a favorite here.
    Dinner tonight will be leftover pot pie and a salad. Lori asked me to post the pot pie and even tho it's leftovers in the frig,will do.

    I had an exciting walk with Joy this morning!!!!! I was a huge owl. It flew over our head and at first I thought it was a hawk but it landed high up on the tree above me and it was the most beautiful owl. Grey with a white face. They are rare around here and it was daytime. couldn't get a picture though :( maybe tommorow. My friend Robyn thinks I should report the sighting to the Mass audobon society but I don't want they trapsing through by nice quiet woods looking for it.

Our computer crashed in the AM yesterday, so wasn't able to check in at all yesterday - he's got it up and running now, but we lost things that were saved on the desktop. :( I spent all day yesterday baking and made some bread, pumpkin muffins, "everything" cookies and some brownie cookies with marshmallow creme! Then made chili and cornbread for an early dinner and took the kiddos out to trick or treat. They had fun, but not many houses had their porch lights on, so really didn't end up with much candy. That's a blessing - less for them to eat!! :)
    Basketball starts today, so going to pull out some prepared chicken and throw it together with brown rice and will concoct a sauce for it from stock and shallots and other throw-ins. :) Will likely fix up some garlic sauteed brussel sprouts to go with.
    Laurie, hope everyone's dr. visits go well. And for your mother as well, Points. Hi, Pat, Janet & Wynne and HI to everyone who hasn't been here yet. Hope everyone has a fabulous day!

I saw a recipe for one on food network's site using jarred marinara sauce (which I have a stock pile of & since I started making my own it's just sitting there waiting to be put to use) but now I can't find it.     Brooke, your baking extravaganza sounds awesome! You know I've been itching to do a lot of baking, haha! I was just thinking of what I'll bake first this week. I want to do it all but it's just the two of us and I don't think we can eat dozens of muffins and cookies before they get stale. So, I'll have to not go crazy and do one at a time.. I think I'm cooking obsessed - cuckoo really :-D

Even with the four of us, sometimes it's hard to eat things up before they go bad - so I always make sure to give lots of stuff away! My dad lives in town, so he always get some of what I make, and I give some away to friends. Spreading the calories around!! I used to take things in to work at my old job, but don't really know anyone here, so don't do that anymore.

    I have the same problem in that it's just the 2 of here too...and Les really isn't a big sweets eater....I find that when making cookies, I make a whole batch of dough, bake up a couple cookies and make up balls of dough and freeze them....That way when I want a couple cookies, I take them out of the freezer, let them thaw and bake them up....I also make other things and freeze it...Quick breads, cheesecakes....I just slice them up first and take out what I need.

    That is very nice that your son is moving near you Corinne. Thanks for the Pumpkin compliments. I was pleased with it. That's a good idea about freezing the cookie dough and just baking a few at a time. Neither my son nor my husband are 'sweets' people so if I get a craving to bake I bring it in for my staff. Cheeseburger Turnovers sound yummy. Report back on that if its yummy.

    That is so cool you saw an owl Laurie. You should google image owls that are found in your area and see what kind it is. I love owls and as you say, they're rare for people to see most anywhere. We get Barred Owls in our area and sometimes Great Horned in the winter time.

    That tomato soup recipe sounds good Dahlia. Report back on that too if its a good one.

    I use regular freezer bags and they work fine......Was gonna bet a vacuum sealer last year but after looking around and pricing them, decided not to.....My husband takes a straw to everything that goes in the freezer and sucks the air out for me...Better lungs....TeeHee....Give it a try, I'm sure you won't be dissapointed.

    Pat, Billy's coming and he will be living with us....He's been struggling with work, school, and having his own place so he gave up school for this year.....We told him he could come live with us only if he enrolled in school down here and made that his priority and he can get a little part time something for spending money...He's only 21 and thought he could do it all......Geeze, I thought the same thing at his age. I am very excited!!!!

    I let a couple of kids stay home today. Wish our school system would get a clue and just let them have off the day after Halloween. Cic loves going to middle school so much that she didn't skip.

    Wynne, nice that your son is coming to live with you! I moved in with my mom (who had moved to New Orleans) when I was 19-20 and I was supposed to be working & saving up money but N.O. is really something and it didn't quite work out that way - hah! I moved back to Michigan and got myself back in gear & school. Was a fun time though and cherish the times I spent with my mom, younger brother, and cousin ♥ My mom lives in Florida now and I don't see her often enough but she's coming for Thanksgiving!

    Ang, those cheeseburger pocks look so fun & yummy! thanks for the link. I'll bet your kids love them.

    Use those little red coffee stirrers instead of drinking straws to collapse the air out of the zip freezer bags. Coffee stirrers are a little more sturdy and don't collapse when you bring the zip in real close so you don't get suck around.

    Janet, your pumpkin looks awesome! Wynne's tuna roll sounds so good! My grandmother used to make "tuna burgers". Not like a burger at all, though. I'm gonna have to see if mom has that recipe somewhere. That recipe makes me think of them. Nice to have that homemade soup to thaw and have for supper!

    Hope Mother had a good dr visit, P. lol on her being up, ready, and chomping at the bit to go at the crack of dawn.

I'm beginning to take more advantage of freezing leftovers than I used to. LOL on Les using the straw for you! I just left out the baking chips and subbed in 1/2 of a 7 oz container of marshmallow creme and used about 1/2 a cup of pecans. I had to really work to incorporate that creme into the batter, so will have to warm it next time to make that easier. They are super awesome though!!

Tomorrow the folks start the day at the doctor's office and are already frantic about how to get from there to the voting place. They have worked out to take portable stools with them in case the lines are long. They can't stand up for very long without trouble. I'm a bit worried about the folks and the 3 corner, fold up camping stools they intend to take. I haven't seen either of them get up out of a regular chair without a great deal of support from the arm rests in a few years now. No arms on those stools. At least there will be folks near by to help.

    That is so cool Laurie about the Barred Owl. Indeed, their call sounds just like it. We have some that live in our neighbourhood and one of my favourite things in the summer when the windows are open is being wakened by that sound. And I have called back and they have answered. It's an awful lot of fun. But hey...I get very excited over birds.
