This is another dish that is pure comfort food, it is very satisfying and filling, this can be served with some mashed potatoes and some of the sauce on top of the potatoes.

Ingredients
  • 8 medium sized green peppers
  • 1/2 lb. ground beef (or 1 lb. beef if you do not want to include pork)
  • 1/2 lb. ground pork
  • 1 raw egg
  • 1 cup washed rice
  • 2- 28 oz. cans of crushed tomatos (or 3 or 4 lbs. fresh peeled tomatos)
  • 1 large white onion, chopped
  • 2 cloves garlic minced.
  • 2 Tbsp. good Hungarian Paprika (buy imported sweet)
  • 1 tsp. salt or more if desired.
  • 2 Tbls. sugar (do not omit)
  • 1/4 tsp. black pepper corns
  • 2 whole Bay laurel leaves
  • 1 cup water only if needed

Directions
  1. Cut off the tops of peppers and reserve. Take out the seeds.
  2. In mixing bowl, place the ground meat, raw egg, washed rice, salt and paprika. Rice can be cooked for about 5 minutes and then drained. Mix well with clean hands.
  3. Stuff peppers, using all the meat mixture. If you have some left over, make a few balls. Set peppers up-right in cooking pot.
  4. Add the tomatos, sugar, onions and chopped tops of peppers over the peppers, toss in the black pepper corns and the bay leaves.
  5. Cover and slowly cook for about 1 1/2 hours. , this can also be done in the crock pot on low for 6 hours.
  6. If it looks too thick add a little water.
  7. sour cream can be added to individual servings.
  8. Serves 4.

I thought I was the only one that knew that Hungarian Paprika is so different than plain old paprika! My father is going to love these...sans bay leaves because he hates them :( Thanks for this one :)

We love stuffed peppers, and we just had them night before last!


Inhaled 2 jumbo stuffed peppers and mashed potatoes and 4 stuffed meatballs. I'm full as a tick on a hound. My stomach is making little puppy dog noises. Need to lay down 'till the swelling subsides.

Great recipe! I have a couple of stuffed green pepper recipes but your recipe is very unique. I am looking forward to preparing it ;-) Cheers!!!


This recipe is a little different from how I make it but I think maybe I'll try it for a bit of variety. I use red bell peppers because I find that they are sweeter when they are cooked than the green. I only use a few peppers because I'm the only one in the house who will eat them; I use 2 peppers and make the rest meat balls.

Alterations


I have used just red peppers, even though they are quite more expensive they are sweeter and less chance of having a bitter aftertaste. Alos, to speed up the cooking time, I use instant rice. (Brown too)
