Skillet Potatoes With Pesto And Shrimp

- 2 Large Potatoes- washed, peeled, and thinly chopped shopping list
- 3-4 Tbls. extra virgin olive oil shopping list
- salt & pepper to taste shopping list
- 1/3 Cup Pesto...I'll include my Mom's quick homemade version at the bottom. shopping list
- 1/2 lb. Large Shrimp- 31-40 ct. size-cleaned and peeled shopping list
How to make it
- Heat oil in a large skillet on med/high heat.
- Sprinkle potatoes with salt and pepper.
- Add potatoes to skillet and cook til tender, stirring frequently.
- Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.
- Cook for about 1 minute to heat pesto.
- Taste and add more salt and pepper if needed.
- Serve warm.

- Mom's Quick and Delicious Pesto
- ************************************************************
- 2 cups of fresh basil leaves
- 3 large cloves of garlic
- 1/2 cup extra virgin olive oil
- 1/4 cup grated parmesan cheese
- Yes...there are no nuts in this recipe and it is still perfect!
- Add all ingredients to a food processor and grind to a loose paste.
