Ingredients

How to make it

  • Combine filling ingredients.
  • In a 9X13 glass or ceramic pan pour a thin layer of enchilada sauce.
  • Place about a half cup of filling in a tortilla. Roll up. Place seam side down into pan. Repeat. You can fit about 8 per pan. Makes 2 pans.
  • Cover enchiladas with sauce, making sure to completely cover all surfaces. Sprinkle with cheese, green onions, and black olives.
  • Bake at 350 for about 45 minutes, it will be slightly brown on top when done and be bubbly.

    Ok heres the deal I haven't tried these yet but I gave you 5 forks anyway cause I know I'm gonna love them when I do. Can't wait to try ASAP ha my 3 year old is looking at the screen begging for me too make this I think I will 2 morrow and I'll fill you in on how delish they taste.

    I love enchilads *just had em for dinner last night* This is a great twist on them. Baby shrimp is salad shrimp? Or can they be used? Let me know. Thank you for giving me great recipes to use for dinner this week.

    Absolutely one of my all time favorite recipes, seafood enchiladas. I like using the green sauce too. That stuff is great with a pork butt in the slow cooker too.

    We love seafood, but it's soooo expensive. This looks like an economical recipe. I'm glad you tried it with green sauce. Now I don't have to worry about trying it. I know it will be good. THX

    I made these last night using Green Chili Enchilada sauce. I also added fresh cilantro to the filling. Very yummy!

    A blend of colby and montery jack works really good with seafood too. Once upon a time, I worked at a Chi-Chi's and they probably made some of the best seafood enchiladas ever!!!

    Thank you. They are yummy. I've made them with green enchilada sauce as well and they are yummy too. It doubles easily as well. I've made them for a huge bunch of people. Very easy to do. I can make them with my eyes closed, almost...LOL
