Ingredients

How to make it

  • Cut peppers in half lengthwise and scoop out seeds.
  • In large skillet heat oil over medium heat, sauté celery and onion for 1-2 minutes, or until softened.
  • Add mushrooms and sauté another 3-4 minutes or until starting to brown.
  • Stir in garlic and remove from heat.
  • Stir in breadcrumbs, Parmesan, ketchup, basil, oregano and either the mozzarella or the feta cheese.
  • Spoon mixture into peppers and place in shallow baking pan.
  • Bake 20 minutes in 375 degree oven until peppers are tender and stuffing is golden.
  • Enjoy!

    Thanks for the recommendation, NPMarie... Janet, this recipe sounds quite tasty. As mentioned elsewhere, I am trying to eat more meatless meals, and this will be an excellent addition to my "arsenal" ;-)

    No way in God's green peppers is a 20 minute bake time going to get those peppers anywhere near tender.
    Stuffing has a nice savory flavor.
    Think I'll parboil the peppers next time.

    I added a little more freshly ground asiago (instead of Parmesan) and some more shredded mozarella to the top (just about 2 T) before popping them in the oven. Fabulous!

    would crushed italian tomatoes work instead of ketchup and can I use fresh mozzarela... these are the only thing that makes me hesitate to try it :P But appart from that Great Post. Cheers Mate !
