Ingredients

How to make it

  • Bring a large pot of water to a boil and cook the pasta until al dente. Drain.
  • In a large skillet, heat olive oil and add onion and garlic. Cook stirring occasionally until the onions are soft and about to turn golden.
  • Add the tomatoes, olives and fresh pepper. Cook until the sauce thickens up a bit.
  • Add the pasta and the goat cheese and stir in gently.
  • Grease a 9" x 11" baking dish and pour mixture into it. Sprinkle with parmesan cheese and parsley to garnish.
  • Bake in a 350F degree oven for 30-35 minutes until the top is browned and the cheese is bubbly.
  • Enjoy!

    I'm going to make your version tonight, sounds delicious! the only thing I don't have is goat cheese..can I sub something for this..some other kind of cheese maybe???

    This was very good and so easy. The olives added enough salt and were almost "meaty" in texture. Baked goat cheese is sublime. There is a lot left for game time tomorrow. Good job, Janet.
