Cider Roasted Brussels Sprouts And Carrots

- 1/2 cup apple cider shopping list
- 1 tsp Dijon mustard shopping list
- 2 tbsp finely minced shallots shopping list
- 1 tbsp. olive oil shopping list
- Salt & pepper shopping list
- 1/2 tsp thyme shopping list
- 3 cups Brussels sprouts, halved shopping list
- 1 1/2 cups sliced carrots shopping list
- 1/4 cup chopped walnuts (toasted, if desired) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Combine cider, mustard, shallots, olive oil, salt and pepper and thyme.
- Pour over sprouts and carrots, tossing to coat. Arrange in a single layer in baking dish.
- Bake for 15 to 20 minutes, stirring occasionally, until tender.
- Sprinkle with walnuts and serve.

I think the sprinkled crushed walnuts is such an inviting touch, very rustic. Love the combination of colors, flavors & textures. Nicely done!
