Ingredients

How to make it

  • Preheat oven to 350 degrees F.
  • Combine cider, mustard, shallots, olive oil, salt and pepper and thyme.
  • Pour over sprouts and carrots, tossing to coat. Arrange in a single layer in baking dish.
  • Bake for 15 to 20 minutes, stirring occasionally, until tender.
  • Sprinkle with walnuts and serve.

    Delicious! What a great new way to have brussels sprouts! I did do 2 shallots and just sliced them thinly. I cannot for the life of me find the apple cider! I looked down the juice aisle and in the cold juice section! Where do you find it? Anyway I ended up using apple juice instead which still turned out wonderful but I would like to try it with the apple cider. I did do 350 about 30 minuted which worked out perfectly. The brussels still had a good crunch. Thanks!

    I wonder if you blanch the brussels first if it might be enough to keep the color and make the cooking time easier to work with.

    Hey Christine! Made these tonight with grilled ham steaks and mashed taters... VERY nice, autumny flavor :) I didn't use walnuts, cus we just don't care for them, and I added some baby squashes along with the carrots and sprouts, cus I had them. All turned out great, BUT, I had to increase my temp to 450 and roast another 12 minutes or so, and they could have gone longer. Is this temp right? If so, then just a warning that others may get the results I did after 20 at 350...I actually checked the at about 17 and knew there was no way they'd be done enough, so I upped it, then. Delicious, though, for sure! I'm adding my pic which woulda been okay cut for the cut ended sprout taking center stage! :)

    These sound wonderful! Love the idea of the cider. I halve sprouts, drizzle them in olive oil, then roast in a superhot oven with pieces of bacon sprinkled over them.
