Ingredients
  • 2 (3 oz) packages ladyfingers
  • 3 to 4 tablespoons Grand Marnier or other orange flavored liqueur
  • 3 envelopes unflavored gelatin
  • 1 3/4 cups cod water, divided
  • 1 cup sugar
  • 3 oranges, peeled, seeded, and sectioned
  • 1 tablespoon grated orange rind
  • 1 3/4 cups fresh ornage juice
  • 2 tablespoons lemon juice
  • 1 3/4 cup whipping cream
  • 3/4 cup miniature marshmellows
  • 1/4 cup chopped pecans, toasted
  • Garnishes: orange sections and fresh mint leaves...

Directions
  1. Cut a 30 x 3 inch strip of wax paper; line sides of a 9 in springform pan with strip.
  2. Split ladyfingers in half lengthwise; line sides and bottom of pan with ladyfingers.
  3. Brush ladyfingers with liqueur; set aside.
  4. Sprinkle gelatin over 3/4 cup cold water; stir and let stand 1 minute.
  5. Combine remaining 1 cup of water and sugar in a saucepan; bring to a boil, stirring until sugar dissolves.
  6. Add gelatin, stirring until it dissloves.
  7. Chop orange sections; drain on paper towels.
  8. Stir oranges and next 3 ingredients into gelatin mixture.
  9. Chill until consistency of unbeaten egg whites.
  10. Beat whipping cream until soft peaks form.
  11. Fold whipped cream and marshallows into orange mixture.
  12. spoon into pan, and sprinkle with pecans.
  13. cover and chill 8 hours.
  14. Remove ring from pan; remove wax paper.
  15. Place on plate, and garnish, if desired.
  16. Yield: 10 to 12 servings.
