California Casserole

- 2 cups vegetable broth(You can use low sodium chicken stock) shopping list
- 3/4 cup long grain rice (I like wild rice) shopping list
- 2 cups light sour cream shopping list
- 2 cans (4 oz each) diced green chiles, drained shopping list
- 1/2 cup sliced green onions shopping list
- 1 tsp dried oregano shopping list
- 1/2 tsp salt shopping list
- Freshly ground pepper (to taste) shopping list
- 2 tbsp chopped fresh parsley shopping list
- 2 large zucchini, sliced shopping list
- 3 tomatoes, seeded, sliced, drained shopping list
- 4 cups grated monterey jack cheese shopping list
How to make it
- Preheat oven to 350 degrees. In a medium saucepan over high heat, bring stock to a boil. Add rice, reduce to low, cook, covered until liquid is absorbed, about 20 minutes. Set aside.
- In a medium bowl, mix sour cream, chiles, onions, oregano, salt & pepper, & parsley.
- In a 4 qt casserole, spray with cooking spray, and add half of the following in layers: rice, sour cream mixture, zuccini, tomatoes, & cheese. Repeat, ending with cheese.
- Bake, uncovered, until bubbly, about 45-50 minutes. Let stand 5 minutes before serving.

This sounds really good. I may have to make this for Christmas. I like to make non-traditional dishes during the later holidays. Only so much turkey and dressing I can stand...as well as my pants :)

Excellent casserole. I used jalapenos but that added a little too much fire. I also failed to let it rest 5 mins as the recipe says, so it seemed a little wet - but after it "rested" it was just fine. Next time I'll do what the recipe sa...more
