Ingredients

How to make it

  • Preheat oven to 350 degrees. In a medium saucepan over high heat, bring stock to a boil. Add rice, reduce to low, cook, covered until liquid is absorbed, about 20 minutes. Set aside.
  • In a medium bowl, mix sour cream, chiles, onions, oregano, salt & pepper, & parsley.
  • In a 4 qt casserole, spray with cooking spray, and add half of the following in layers: rice, sour cream mixture, zuccini, tomatoes, & cheese. Repeat, ending with cheese.
  • Bake, uncovered, until bubbly, about 45-50 minutes. Let stand 5 minutes before serving.
  • Enjoy!

    Sorry about the typo on the size of casserole dish, use a 2 or 2 1/2 qt dish, NOT 4 qt!

    Had to make this after all the great reviews! I followed the recipe exact and it was so good! This is a great recipe to play with. Any cheese would be good with this! Pepper jack would be great too! I did halve the recipe so I used a smaller dish than every one else in the pics. Can't wait to make this for a get together! Thanks!!     This was very good! I had to make some substitutions according to what I had on hand. I used jarred jalapenos instead of green chilies, I used roasted red peppers instead of zucchini and I used a combo of cheddar, mozz and grated Parmesan cheeses. I also used 1/2 parsley and chives because I love chives! I think this would be great with any veggies of your choice. i think I'll try spinach and tomato next time! By the way, this fit perfectly in a 2 qt. casserole! I added my photo! Thanks for a great recipe!

    Excellent casserole. I used jalapenos but that added a little too much fire. I also failed to let it rest 5 mins as the recipe says, so it seemed a little wet - but after it "rested" it was just fine. Next time I'll do what the recipe says! :)

    We had bad squash bugs this year and didn't get the zucchini we did last year. I hope we have some cold weather this winter to kill off those bugs! This sounds delicious and I bookmarked it for next summer. Hugs, Anj

    This sounds really good. I may have to make this for Christmas. I like to make non-traditional dishes during the later holidays. Only so much turkey and dressing I can stand...as well as my pants :)
