How to make it

  • Cookies

  • Preheat oven to 375F. Line two cookie sheets with parchment paper.
  • In a small mixing bowl combine flour, baking powder and salt. In a large mixing bowl cream butter & sugar. Add egg, ricotta, lemon juice & zest until well incorporated. Slowly add dry ingredients, mixing to incorporate.
  • Make dough balls with about 2 tbsp of dough, place on parchment paper. Bake for 12-15 minutes, until lightly browned on bottom & toothpick inserted comes out clean. Transfer to cooling rack and cool for at least 30 minutes before glazing.
  • Glaze

  • Combine ingredients in a small bowl. Whisk until smooth. Start with 1 tbsp milk and add more if needed to reach desired consistency. Spread on top of cookies using back of a spoon. Allow to cool for at least an hour before stacking/packing.

    Delightful. Do you think the Lemon Ricotta Cookies dough would keep in the freezer? I often make up cookie and freeze logs for later so I don't bake more than Mr. SuchAFuss will eat in a week.

    I can't believe I forgot to rate these! What was I thinking? Sorry Dahlia! :) These are A-1 fabulous, delicious, little pieces of lemony heaven! The texture is divine and the flavor is just perfect, not overwhelming at all (sometimes I find that lemon can be overwhelming). I was addicted after the first bite! :)

    I try and avoid bookmarking 'baking' recipes I'm not near as teeny as you Dahlia! But...after Brooke's rave review, I feel that I must try them out. Will bring the batch into my staff and try only eat one (or two :) )

    Sounds absolutely fabulous! Love the lemon iced cookies from Ham N Goodys...they don't have ricotta though. That sounds even better!!! Can't wait to try.
