Root Beer Cake With Cream Cheese Frosting

- For cake: shopping list
- • 2 c. flour shopping list
- • 1 tbsp. baking powder shopping list
- • 1 tsp. salt shopping list
- •1/2c. (1 stick) butter shopping list
- • 2 eggs shopping list
- • 1 c. sugar shopping list
- •1/2tsp. vanilla shopping list
- •2/3c. root beer (not diet) shopping list
- For frosting: shopping list
- • 21/2to 3 c. powdered sugar shopping list
- • 2 tbsp. root beer (not diet) shopping list
- • 1 (3-oz.) pkg. cream cheese, softened shopping list
How to make it
- Preheat oven to 375 degrees. Grease a 9- by 13-inch baking pan.
- Mix the flour, baking powder and salt and set aside.
- Blend butter and eggs.
- Add sugar and vanilla.
- Fold in flour mixture with root beer. Do not overbeat.
- Pour into prepared pan.
- Bake 30 to 35 minutes or until a toothpick inserted in center comes out clean.
- Frost when cool.
- To make frosting:
- Mix ingredients until smooth. If too thick, add more root beer. If too thin, add more powdered sugar until you get a consistency that is easy to spread.

You know, I made this and I was surprised that I actually liked it better the second day. Don't get me wrong. . . I *really* enjoyed it the first day too, but the flavor was more there the second day. The cake does not have an overwhelming rootbeer...more

There isn't much root beer taste here at all and I thought the frosting tasted like powdered sugar and nothing else. I added a picture and this is now in IMI. 10/11/14
