Red Roasty Soup

- 3 cups tomatoes, chopped shopping list
- 2 cups red peppers, chopped shopping list
- ½ large white onion, chopped shopping list
- 6 cloves garlic, unpeeled shopping list
- 2 cups hot vegetable broth shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 375F, line 2 baking sheets with parchment.
- Place vegetables and garlic on sheets, roast 45 minutes.
- Squeeze garlic pulp into blender, scrape in tomatoes, peppers and onion.
- Blend slightly, add broth, salt and pepper.
- Blend until smooth.
- Serve hot.
