This is a very popular dish in Syracuse, NY. and a must if you go to the State Fair. They served a lot at picnics and BBQ's.. I don't use as much salt in as the recipe calls for..

Around these parts of Upstate NY, we can buy the potatoes and salt in one bag at the grocery stores. It has 4 pound of potatoes and 12 ounces of salt. These are great hot and cooled, they make a great potato salad!

Do they really serve this at State fairs? That's interesting. Do you mash up or slice the potato before you add the butter to it, or is it served whole with melted butter over the top? I'm just curious since the recipe is for boiled and salted potatoes. Any kind of potato with butter on it has to be good! Thanks for posting your recipe! Now I want a potato for dinner!

Yes they really serve these at the state fair.. you get them in a container like hot dogs come in.. they are very small, 2-3 bites. the salt drys on the outside of the potaro when you take them out of the water.. put lots of butter on and if at the fair eat with your fingers. now I want some!!!

I LOVE, LOVE, LOVE potatoes! You can also add a little crab boil liquid to the water...that's how we do it down here when we boil crawfish or crabs..and the leftovers make a fantastic potatoe salad!

Peeta, I haven't had these in a very long time! I guy I dated was originally from the Syracuse area (Chittenango) and he used to make these for me...delicious!! I thought he was crazy putting in so much salt!!! I think he put in more than a pound... Thanks!
