Cream Cheese Banana Bread with Crunchy Pecan Topping

- 3/4 cup salted butter shopping list
- 1 8oz. package cream cheese shopping list
- 2 cups sugar shopping list
- 2 large eggs shopping list
- 3 cups all-purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon Salt shopping list
- 2 cups mashed bananas - (I make it semi-chunky) shopping list
- 1/2 teaspoon vanilla shopping list
- CRUNCHY pecan TOPPING shopping list
- 1/2 cup brown sugar, firmly packed shopping list
- 1 cup pecans, coursely chopped shopping list
- 1 tablespoon flour shopping list
- 1 tablespoon butter, melted shopping list
- 1/4 teaspoon cinnamon shopping list
- 1/2 teaspoon vanilla shopping list
How to make it
- Preheat oven to 350 degrees and grease/flour two loaf pans.
- I use Baker's Joy, much easier!
- Cream butter and cream cheese with electric mixer at medium speed.
- Gradually add sugar and beat until light and fluffy.
- Add eggs one at a time, beating after each addition.
- Combine flour, baking powder, baking soda and salt in medium bowl.
- Gradually add to butter mixture, mixing well after each addition.
- It will be slightly dry at this point, don't worry!
- Stir in bananas and vanilla, mix well.
- Spoon batter evenly into loaf pan, sprinkle Pecan Topping on top of batter (recipe to follow).
- Bake for 1 hour at 350 degrees or until toothpick inserted in center of each loaf comes out clean.
- Shield with foil last 15 minutes to prevent overly browning of topping.
- Remove from over and cool for 10 minutes in pan.
- Then loosen and remove from pan and cool completely on rack.
- TOPPING:
- Combine all ingredients in order and stir well to coat pecans, spinkle on top of batter.
- Note: Walnuts can be used in place of pecans if preferred.

I made this recently and thought it was quite good.
The crunchy top makes the bread even better.
It's a keeper recipe and recommend it as a good recipe to try.
