This fluffy banana bread is perfect! The cream cheese and crunchy pecan topping makes it even more delectable. This bread is perfect for breakfast or brunch.

  • BREAD
  • 3/4 cup Salted Butter
  • 1 8oz. package Cream Cheese
  • 2 cups Sugar
  • 2 large Eggs
  • 3 cups All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Mashed Bananas - (I make it semi-chunky)
  • 1/2 teaspoon Vanilla
  • CRUNCHY PECAN TOPPING
  • 1/2 cup Brown Sugar, firmly packed
  • 1 cup Pecans, coursely chopped
  • 1 tablespoon Flour
  • 1 tablespoon Butter, melted
  • 1/4 teaspoon Cinnamon
  • 1/2 teaspoon Vanilla

Directions
  1. Preheat oven to 350 degrees and grease/flour two loaf pans.
  2. I use Baker's Joy, much easier!
  3. Cream butter and cream cheese with electric mixer at medium speed.
  4. Gradually add sugar and beat until light and fluffy.
  5. Add eggs one at a time, beating after each addition.
  6. Combine flour, baking powder, baking soda and salt in medium bowl.
  7. Gradually add to butter mixture, mixing well after each addition.
  8. It will be slightly dry at this point, don't worry!
  9. Stir in bananas and vanilla, mix well.
  10. Spoon batter evenly into loaf pan, sprinkle Pecan Topping on top of batter (recipe to follow).
  11. Bake for 1 hour at 350 degrees or until toothpick inserted in center of each loaf comes out clean.
  12. Shield with foil last 15 minutes to prevent overly browning of topping.
  13. Remove from over and cool for 10 minutes in pan.
  14. Then loosen and remove from pan and cool completely on rack.
  15. TOPPING:
  16. Combine all ingredients in order and stir well to coat pecans, spinkle on top of batter.
  17. Note: Walnuts can be used in place of pecans if preferred.

That sounds so delicious (and your picture is beautiful!) - I just went out to the kitchen to take 3 bananas and hide them so I can make this as soon as they ripen enough. Banana bread is a favorite here, and I will be trying this one just as soon as those bananas are ready - great post!

Alterations


I would substitute almonds for the pecans. My husband is allergic to pecans and walnuts, but can eat almonds. I use almonds in place of pecans in all kinds of recipes and they turn out fantastic.
