Ingredients

How to make it

  • Preheat oven to 350 degrees and grease/flour two loaf pans.
  • I use Baker's Joy, much easier!
  • Cream butter and cream cheese with electric mixer at medium speed.
  • Gradually add sugar and beat until light and fluffy.
  • Add eggs one at a time, beating after each addition.
  • Combine flour, baking powder, baking soda and salt in medium bowl.
  • Gradually add to butter mixture, mixing well after each addition.
  • It will be slightly dry at this point, don't worry!
  • Stir in bananas and vanilla, mix well.
  • Spoon batter evenly into loaf pan, sprinkle Pecan Topping on top of batter (recipe to follow).
  • Bake for 1 hour at 350 degrees or until toothpick inserted in center of each loaf comes out clean.
  • Shield with foil last 15 minutes to prevent overly browning of topping.
  • Remove from over and cool for 10 minutes in pan.
  • Then loosen and remove from pan and cool completely on rack.
  • TOPPING:
  • Combine all ingredients in order and stir well to coat pecans, spinkle on top of batter.
  • Note: Walnuts can be used in place of pecans if preferred.

    Just made this past week - to rave reviews! I altered it a little to try and make a little healthier:
    1.5 cups whole-wheat flour, 1.5 cups all-purpose
    1.5 cups sugar
    low-fat cream cheese

    I made this recently and thought it was quite good.
    The crunchy top makes the bread even better.
    It's a keeper recipe and recommend it as a good recipe to try.

    That sounds so delicious (and your picture is beautiful!) - I just went out to the kitchen to take 3 bananas and hide them so I can make this as soon as they ripen enough. Banana bread is a favorite here, and I will be trying this one just as soon as those bananas are ready - great post!
