Ingredients

15 oz. part skim ricotta cheese

2T.grated parmesan cheese

1(10 oz. box frozen chopped spinach,thawed/drained

2 eggs

1c.sliced scallions

1/2c.crumbled feta cheese

1T lemon juice

2tsp.dried dill

1/2t. salt

1/4t.black pepper

1/4t.ground nutmeg

4 sheets phyllo dough

2T. olive oil

1/4c.dry breadcrumbs,divided

Directions

Heat oven to 375degrees

Coat 9" pie dish with cooking spray.

In a bowl,combine all ingredients except phyllo dough,oil and breadcrumbs.

Place 1 sheet of phyllo dough in pie dish

Brush with oil and sprinkle 1 T.breadcrumbs

Repeat with phyllo,oil and breadcrumbs till all are used.

Place spinach mixture into pie dish

Fold edges of phyllo over to seal

Cut 4 steam vents in top of dish

Cover and bake for 45 mins.
