Quicky Potatoes

I grew up on this type of potatoes. If we got a plate full of potatoes.. we thought we had a good meal...
Ingredients
- 1 tablespoon oil (I use olive oil now) shopping list
- 1 large onion, chopped shopping list
- 2 cloves of garlic, minced shopping list
- 1/2 cup chopped sweet red pepper (green can be used) shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 1/4 teaspoon hot sauce (your favorite) shopping list
- 3 cups unpeeled cubed potatoes shopping list
- 2 tablespoons butter shopping list
How to make it
- Heat oil in a large cast iron skillet.
- Add onion and garlic; cook over medium heat, stirring constantly, until tender.
- Stir in red or green pepper and next 3 ingredients; cook 2 minutes, stirring constantly.
- Add potatoes and butter, stirring well.
- Bake at 400 degrees for 20 to 30 minutes.
- Cheese can be added for extra flavor when removed from oven..

I make this dish quit often.. we love potatoes and this is one of our favorites.. I also chop a Jalepeno pepper .. we love it hot! I use Olive oil also..yumm
