Baked Fish with Garlic Crust

- 2-3 Large garlic cloves Smashed (more or less depending on tastes) shopping list
- 3 TBSP butter shopping list
- 3 TBSP olive oil shopping list
- 4 fish Filets - I prefer a white fish shopping list
- 1/4 Cup fresh parsley, can substitute dried but cut way back shopping list
- 1 Cup Plain bread Crumbs shopping list
- 1/2 -1 TSP Dried thyme shopping list
How to make it
- heat oven to 350 degrees
- Melt butter and olive oil in a small saute pan over medium low heat
- Add garlic and cook until soft over low heat about 15 minutes do not brown
- while garlic butter is cooking dry fish fillets
- season fish with salt pepper and thyme
- remove garlic pieces and reserve for another use (makes a great base for garlic bread)
- remove oil from heat and add parsley and bread crumbs until all oil is absorbed and a crumb topping made
- top fillets with crumb topping and bake in oven about 15 minutes or until fish is done and flaky
- enjoy!

This was very tasty and I can see that the topping could be very versatile. I used fresh basil, parsley and thyme from my garden. Added a picture as well.
