Chicken Orobianco

- 1/2 Cup olive oil shopping list
- 2 cloves, --or more-- garlic, quartered shopping list
- 4 whole chicken breast, quartered, deboned, and trimmed shopping list
- 2 lbs hot italian sausage -- or 1 lb sweet and 1 lb hot shopping list
- 2 cups Orobianco wine -- or a nice, white wine.. sweet or dry to taste shopping list
- 1/2 lb mushrooms -- or more... more is always better here...sliced or whole..it's up to you. shopping list
- 1/4 cup water shopping list
- 2 Tbsp cornstarch shopping list
- rice shopping list
How to make it
- In a large skillet over med-high heat, cook garlic until golden.
- Remove garlic and discard
- In the garlic-oil drippings over med-high heat, cook the chicken and sausage a few pieces at a time until brown on all sides.
- Spoon off all but 2 Tbsp of drippings
- Return sausage and chicken to skillet
- Stir in wine and mushrooms, heat to boiling, then reduce heat to low. Cover and simmer 30 min. basting occasionally .
- Remove meat and arrange on a warm platter.
- In a cup, blend water and cornstarch until smooth. Gradually stir into hot liquid in skillet and cook until thickened.
- Spoon sauce of meat.
- Note - I like to garnish with some freshly chopped parsley
- Serve with rice.
