The Italian sausage, wine, chicken and seasonings combine nicely over rice for comfort on those cold winter nights.

Ingredients
  • 1/2 Cup Olive oil
  • 2 cloves, --or more-- garlic, quartered
  • 4 whole chicken breast, quartered, deboned, and trimmed
  • 2 lbs hot Italian sausage -- or 1 lb sweet and 1 lb hot
  • 2 cups Orobianco wine -- or a nice, white wine.. sweet or dry to taste
  • 1/2 lb mushrooms -- or more... more is always better here...sliced or whole..it's up to you.
  • 1/4 cup water
  • 2 Tbsp cornstarch
  • Rice

Directions
  1. In a large skillet over med-high heat, cook garlic until golden.
  2. Remove garlic and discard
  3. In the garlic-oil drippings over med-high heat, cook the chicken and sausage a few pieces at a time until brown on all sides.
  4. Spoon off all but 2 Tbsp of drippings
  5. Return sausage and chicken to skillet
  6. Stir in wine and mushrooms, heat to boiling, then reduce heat to low. Cover and simmer 30 min. basting occasionally .
  7. Remove meat and arrange on a warm platter.
  8. In a cup, blend water and cornstarch until smooth. Gradually stir into hot liquid in skillet and cook until thickened.
  9. Spoon sauce of meat.
  10. Note - I like to garnish with some freshly chopped parsley
  11. Serve with rice.
