Ingredients
  • 1 large roasting chicken, cut up for easier handling, plus gizzards
  • 1 large parsnip, peeled and cut to 1" pieces
  • 3 stalks of celery, cut to 1" pieces
  • 3 large carrots, peeled and cut to 1" pieces
  • 1 medium onion, peeled, quartered, and sliced
  • 1 bunch parsley, rinsed well
  • 1 bunch dill, rinsed well
  • water
  • Kosher salt
  • Pepper

Directions
  1. In a large stockpot place the chicken, vegetables and water.
  2. Tie the parsley and dill together with chef's twine and dangle the end outside the pot for when you want to fish it out.
  3. Add water until everything is covered.
  4. Add some salt (more added at the end to taste)
  5. Bring this to a boil and then simmer for about three hours.
  6. **Be sure to turn the chicken occasionally to cook evenly.
  7. **Be sure to skim the foam off the top periodically.
  8. Add salt and pepper to season to taste.
  9. When this is done simmering you can serve up bowls of the broth plus some of the vegetables. Remove the herbs, just leave the loosened bits. The cooked chicken is great then but also makes THE tastiest chicken salad. (I love it in my already posted Easy Pasta Salad)
  10. If you enjoy a hearty soup puree all of the vegetables and serve with pieces of the chicken in it for a filling meal with bread or matzoh.

i made this today and it is FANTASTIC!!!...

it's warm and cozy and nourishing and flavourful and just perfect!
i am so excited...
i had to go out and came home to a house that just smelled like everything good...

i've got most of it nicely stacked in individual containers in my freezer so i can have it handy whenever i feel the need to have something that tastes good that is good for me...

now that i have done this...
it will be part of my regular repertoire...

there just isn't anything like it!...

WHAT ABOUT THE MATZO BALLS??!! AFTER PASSOVER, MY LOCAL PATHMARK TAKES ALL THE LEFTOVER MATZO MEAL, ETC. AND REDUCES IT LIKE CRAZY! I GOT THE LARGE CANS OF MEAL (NORMALLY $5.67) FOR A MERE 82 CENTS! GUESS I'LL BE MAKING ALOT OF MATZO BALLS! NO PROBLEM, MY KIDS LOVE 'EM! TAKE CARE, THANKS AGAIN

Jeri - thanks for the really nice remarks. Back in our last home in NY we lived one mile from a Pathmark. Here in Northern Ca. we cannot find items such as rendered chicken fat. For matzoh balls I have to admit to just using a boxed mix and chopping in some parsley and those turn out fine. The soup then gives so much flavor to them when they go in and it works out well.

I am sorry you still miss your mother so deeply and hope that a little of our family's medicinal soup helps ease the ache.

This is so much like my families recipe...I'll have to post it so you can see....the parsnip and parsnip roots are what make it so yummy.


2 weeks ago my grandkids were down with earaches... had to make them jewish penecillin! It was great and they ate it all. I bought those frozen egg noodles as I was pinched for time. Seemed to have killed the earaches! Having trouble getting matzo meal here. I think I will have to order on line. The box I found had bugs!


Matzoh meal is out of season after the holidays, the mealy bugs report is not a shocker.

I am so glad the kids are better and am certain, like you, that this was the magic cure-all. LOL

There was not a word spoken by my husband and dad-in-law while they ate this, which is a definite thumbs-up! Didn't find the matzo meal, so I made regular Southern dumplings (long and flat). It's just all good!


Inteeresting twist - the dumplings. cooking's about making it good ANd personal and clearly you did. Brava!

SUGGESTION: For those who want a little something in their chicken soup but aren't making matzoh balls do what my mother did -- prior to serving your soup cook and drain some very thin noodles. She used to have the noodles set in a bowl on the kitchen counter and would slip them into the soup shortly before serving so they'd get hot but not get over-cooked from additional cooking time. It is the easiest answer and voila, chicken noodle soup.


My all time favorite soup! Thank you for the recipe, as I go to my best deli *Zaftig's* when I am feeling a cold coming on for a *care package* with Matzo Balls, a must! :)

OMG...this is just like my best friend's mom in elementary school cooked it! And now I will buy the organic whole chickens from Costco and do the same. It comes in two's. One I can "Beer Can" grill and the other I can soup! Oh boy, I'm so happy!
