Light, Fluffy, The Citrus Aroma and Flavor you get from these pancakes is HEAVENLY...Makes regular pancakes seem dull and boring..

Ingredients
- 2-1/4 cups all purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1-1/2 cups whole milk
- 1/2 cup fresh orange juice
- zest from 3 large oranges,
- 4 lg. eggs, separated
- 3 tbsp. butter melted or oil
- 3 tbsp. sugar
- your favorite syrup
Directions
- Mix first 3 ingredients together
- then in another bowl whisk milk, orange juice, orange zest, butter/oil and egg yolks
- mix together with dry ingredients to form a smooth batter
- next whisk egg whites gradually adding the sugar till stiff peaks form
- carefully fold whipped egg whites in to batter then cook as you would any other pancake top with your favorite syrup and butter enjoy.....

I have a orange tree in my back yard so i try to use orange juice/zest when ever i can it adds a nice little twist and perks up some of my recipes

I'm going thru citrus meltdown (there used to be a business that would bring cases of oranges and grapefruit up from FL and sell out of the back of the semis - the fruit stayed on the trees longer than what's available in the stores) - so having a tree in your backyard is more than enviable right now! I'm looking forward to trying these.
