Damn I Miss My Ex-mother-inlaw - Sauce That Is Recipe
The woman can cook... loved that part of her. and this is a great base sauce. A French-Canadian who married a "off the boat" Italiano.. she learned to do Italian well.

Ingredients
  • Base sauce:
  • Olive Oil
  • 3 large onions
  • 8 garlic cloves
  • 2 large cans of Italian (manzano) tomatoes with basil
  • 1 large can tomato paste
  • Salt, pepper, and sugar to taste.
  • Italian spice to taste
  • Options:
  • Hamburg
  • Sirloin steak, cubed
  • Zucchini, sliced thin
  • Mushrooms, Mushrooms,,,, and yes more mushrooms

Directions
  1. Blend the 2 cans of peeled tomatoes briefly, make sure you remove the bay leaves, if they are in the can, and seed the tomatoes.
  2. Method 1:
  3. In a large sauce pot, pour olive oil in bottom of pan and cook over med-high heat, cook the diced onions and sliced garlic until brown, then discard the onions and garlic.
  4. Method 2: (Wolf preferred)
  5. In a large sauce pot, pour olive oil in bottom of pan and sweat the diced onions and minced garlic until they are soft and translucent.
  6. Next, add the two cans of blended tomatoes and tomato paste and mix until ingredients are well blended.
  7. Salt, pepper, sugar, and Italian spices to taste (I recommend some red pepper flakes too).
  8. Bring it all to a simmer.
  9. Add optional (mushrooms, etc..) here... If adding Sirloin cubes or hamburger, brown and drain before adding to the sauce.
  10. You may need to add some some water while this is simmering.
  11. Simmer for at least 1-1/2 hours.
  12. Serve on your favorite pasta, lasagna, or ... eat it straight with a slice of good bread.

Absoluely Fabulous!! LOVE the title...my ex mother-in-law had one or two recipes up her sleeve too! Unfortunately, they involved a garden and home-canning, so, they are in no danger of being duplicated by me...LOL. Thanks for posting.
