Chicken Tenders With Creamy Honey Mustard

- 1/3 c. all purpose flour shopping list
- 1 lg. egg,lightly beaten shopping list
- coarse salt and ground pepper shopping list
- 4c. crisp rice cereal shopping list
- 2Tbs olive oil shopping list
- 11/2lbs chicken tenders(tenderloins) shopping list
- 1/2c reduced fat sour cream shopping list
- 2Tbs Dijon mustard shopping list
- 1Tbs honey shopping list
- 4 med. carrots,cut in sticks shopping list
- 1 cucumber,halved lengthwise,seede and cut in sticks shopping list
How to make it
- Preheat oven to 475. Place flour in a shallow bowl and egg in a second one,season both with salt and pepper Pulse cereal and oil in a food processor until fine crumbs form. Season with salt and pepper;transfer to third shallow bowl. Coat chicken:first in flour then in egg and then in cereal mixture,pressing to help adhere. Place on a baking sheet,and bake until light golden brown and cooked through,10 to 15 mins.,turning over halfway through.
- Meanwhile,in a small bowl,mix together sour cream,mustard and honey;season with salt and pepper. Serve tenders and vegetables with creamy honey mustard on the side.
