How to make it

  • Preheat oven to 375. In a mixing bowl,toss the sugar together with the fruit. Put the butter in an 8x11" ovenproof serving dish and place in oven to melt. Sift the flour,pbaking powder,and salt together into a bowl. Stir in the milk to make a batter. Pull the hot dish of melted butter out of the oven and pour in the batter,which will bubble around the sides. Quickly spoon the fruit and it's juices evenly over the batter. Return to the oven and bake until the dough is brown and has risen up around the fruit,about 30-40 mins.

    This is super easy. Made this for a co-worker's birthday. I used 1 cup of raspberries plus 1 cup of peaches - both fresh. I cut the sugar in half and was glad I did! The birthday girl came to me and said she was happy it wasn't too sweet, which it wasn't. Seemed like it was just right! I cooked it for the full 40 minutes. It would be good with some ice cream, I think, especially if it was warm. I added a picture and a thread in IMI 6/16/14
