Crushed Potatoes

- 12-14 baby yukon potatoes (Can use small new potatoes as well) shopping list
- 2 tbls. butter shopping list
- 2 tbls. chopped parsley shopping list
- salt and pepper to taste shopping list
How to make it
- Boil potatoes until fork tender
- Briefly cool so that you can handle them
- Place potatoes on cutting board
- Take chef's knife and place over potato and smack lightly with palm to slightly burst potato
- Melt butter in saute pan
- Place potatoes in pan and brown on both sides over medium heat
- Sprinkle parsley and salt and pepper over potatoes
