Ingredients
  • 12-14 baby yukon potatoes (Can use small new potatoes as well)
  • 2 tbls. butter
  • 2 tbls. chopped parsley
  • salt and pepper to taste

Directions
  1. Boil potatoes until fork tender
  2. Briefly cool so that you can handle them
  3. Place potatoes on cutting board
  4. Take chef's knife and place over potato and smack lightly with palm to slightly burst potato
  5. Melt butter in saute pan
  6. Place potatoes in pan and brown on both sides over medium heat
  7. Sprinkle parsley and salt and pepper over potatoes

Yeah! This sounds great.


Ooooooo, saw some chef on TV do this. I tried it using nuked potatoes,smashed, brushed or drizzled with E.V.O.O and sprinkled with herbs and green onions and grated cheese of choice and finished in oven til cheese melts. It was a big hit! Thanks for the post. (Serve with fat free sour cream,LOL.)
