Ingredients

How to make it

  • Add liver to milk and let soak for an hour or so
  • In large skillet, cook bacon until crisp
  • Remove bacon, set aside
  • Mix flour and salt and pepper
  • Place flour mixture on a large plate and dredge liver
  • Place in fridge until ready to cook
  • Take half of bacon drippings and add to another large skillet
  • Heat to medium and add onions and cook until tender
  • In other skillet, heat bacon drippings on medium high heat
  • Add calves liver and cook a minute or 2 on each side
  • Plate and top with onions and bacon bits
  • If more fat is needed, add olive oil

    I think the reason most people don't care for liver is because they over cook it, my mom cooked it til it was hard and tough. This recipe sounds great, Thanks.

    Oh gosh - this one takes me back! My Mom always served onions and bacon with calves liver, like pat2me, in strips. I was the only kid that would eat it. Rarely get liver now since DH can't stand it. Sounds so good tho - maybe I'll just make it for myself next time he travels!

    Great post ,this is the way I fixed it.Its hard to find fresh but some frozen(better if soaked in milk for 30 min.) is better than none. You got my 5.

    This was the way my mother did it and I do it also....fantastic and not overcooked. Biggest problem today is finding fresh calf liver, most of what I see is frozen, which is okay, but not like the fresh. Great post...makes me hungry.

    This is just about the way I do mine....I leave the bacon in strips and only use one pan.(That lazy thing again)
    The liver has to be slightly pink in the middle like yours is cooked.
    Absolutely delicious.....!!!!!! I agree....a 5!!!

    My mother would try to pull this off like it was steak!!! It would always smell so good, maybe it was the bacon. I always knew it could not possibly be steak. My husband loves liver and if he wants it, he has to fix it. I will sure tell him about this one. He thanks you!
