Ingredients
  • 11/2c sugar,divided
  • 2tsp ground cinnamon
  • 2c flour
  • 11/2tsp. baking powder
  • 1/2tsp salt 1 egg,beaten
  • 1c milk
  • 1c cooking oil

Directions
  1. Preheat oven to 350
  2. Grease and flour a 9x5x3" loaf pan. Mix 1/2c sugar with the cinnamon;set aside In a lg. mixing bowl,combine the flour,baking powder,salt and remaining sugar. In a separate bowl combine the egg,milk and oil;add to the flour mixture. Stir until just moistened.
  3. Poue half the batter in the prepared pan. Sprinkle with half the cinnamon/sugar mixture. Repeat with remaining batter and cinnamon mixture. Draw a knife thru the batter to marble the bread.
  4. Bake at 350 for 45-50 mins or till toothpick inserted in center comes out clean. Cool in pan for 10 mins. Remove from pan. Cool. Wrap and storebread overnight before slicing.

I'll let you know after I make this recipe. I'm never quite sure how to go about getting yeast in China, so this looks ideal. Thankfully, I have all the ingredients already!

Alterations


Would it be nice with a light sugar icing drizzled on top?


I added about a teaspoon of vanilla as I don't have access to baking powder and have to substitute baking soda. I find that without the vanilla, the soda overpowers doughs. This is just due to what I have available in China, not a flaw in the recipe, though; just like using powdered milk since fresh milk is hard to find in a small Chinese city!
All that said, this is a great and easy recipe :)
