Don't laugh at me for making my lasagna in the slow cooker; it's really good!

Ingredients
  • 1 lb Italian turkey sausage
  • 1 medium onion, chopped
  • 1 large (28 oz) jar spaghetti sauce
  • 2 tsp Italian seasoning
  • 1/4 tsp thyme
  • 1 15oz container part skim ricotta cheese (can use fat free - you won't taste the difference)
  • 1/2 to 1 c shredded parmesan or romano
  • 2 c shredded mozzarella
  • 12 uncooked lasagna noodles

Directions
  1. Spray slow cooker with cooking spray
  2. In a large skillet, saute sausage and onion over medium heat until browned
  3. Drain
  4. Add sauce and seasonings, mix well, reduce heat to low
  5. In a bowl, combine ricotta, parmesan, and 1 cup of mozzarella
  6. Spoon 1/4 of the sausage mixture into the slow cooker, top with noodles, broken to fit
  7. Top with half the cheese mixture
  8. Continue building layers until all ingredients are used
  9. Cover and cook on low 6-8 hours or high 3-4 hours
  10. Sprinkle with remaining mozzarella, cover and cook 15 minutes more until cheese is melted

Have made crock pot lasagna and it is good. Just make sure the noodles don't stick togeather.
